Choc Oatmeal Cookies






My husband is taking me out to dinner tonight. We are going to one of the best restaurants in the area. Lucky Me right? ...Right... absolutely. There's just one little thing though. I still have two boys and a babysitter to feed. Yes, before I go out and enjoy a night where I don't have to cook, I still have to provide a meal and "special treat" for those I leave behind. Well I could probably leave them with take-away pamphlets (which has been known to happen in the past), but I figure making a batch of these Choc Oatmeal Cookies is a small price to pay for a romantic dinner for two. Anyway, may be they'll leave us some for when we get home - here's hoping!

Choc Oatmeal Cookies

Makes about 30

150g softened unsalted butter
230g soft brown sugar
1 egg, lightly beaten
2 teaspoons vanilla extract
1 cup plain flour
1 teaspoon baking powder
pinch of salt
235g rolled oats
175g chocolate chips or chopped up chocolate

Preheat the oven to 180 degrees C. Line two baking sheets with baking paper.

With an electric mixer, cream the butter and sugar until light and fluffy. Add the egg and vanilla and mix to combine. Sift the flour, baking powder and salt into the bowl and mix lightly. Add the oats and chocolate and stir to combine. 

Take a tablespoon of mixture in your hand and form it into a small ball. Place on the baking trays and use a fork dipped in flour to flatten them slightly. The size of the cookies if up to you so if you want little ones make little ones, or big ones. They won't spread out too much but leave some space around them on the tray.

Bake for 15-20 minutes until golden. Remor carefully from the oven and cool on the trays for 5 minutes before transferring them onto a wire rack to cool completely.
