NOTE: If you want to make the full amount, just double the quantities (and your dress size if you're anything like me and can't stop at one. :)
Chocolate Peanut Butter Pretzel Bites
Makes about 12 - 14 (I made 13, go figure.)
1/2 cup smooth peanut butter
15g softened unsalted butter
1/4 cup icing sugar (may be more)
1/2 cup brown sugar (may be more)
100g dark chocolate chips
Line a baking tray with baking paper.
Put the peanut butter and softened butter in a bowl and mix until smooth (I used a hand-held electric mixer). Add the sugars and mix to combine. The filling needs to be able to be rolled easily into balls without sticking to your hands. If not, add a little more of each sugar until you reach a consistency that is easy to roll.
Use a teaspoon to scoop the filling out into your palms and roll each portion into a small ball, then sandwich them between two pretzels. When all the balls are rolled and sandwiched, put them on the tray and put the tray in the freezer for half an hour.
Pour the chocolate chips into a microwave safe bowl and heat at 30-second intervals, stirring occasionally until completely melted. Remove the pretzel sandwiches from the freezer and dip each half-way into the melted chocolate. Return to the tray and repeat with remaining sandwiches. When they are all dipped, return the tray to the freezer to firm up. Keep the pretzel bites in the refrigerator until it's time to serve.
